Preparing for the Cook-Along with

We are delighted to host Maria Lawton as she demonstrates two delicious recipes from the Azores! The class will make Biscoitos Cerveja (beer biscuits) and Ovos com Molha de Tomate e Cebola (eggs in tomato sauce with onion.)

If you plan to cook along, please have these ingredients and cookware ready.

Biscoitos Cerveja (beer biscuits)

1 baking sheet, greased or lined with parchment paper, large mixing bowl

1 3/4 cups of all purpose flour

9 tablespoons of softened, salted butter

1/3 cup of beer (preferably a light beer, like a pale lager) 

1/2 cup of granulated sugar and 1/2 cup of brown sugar, mixed together

 

Ovos com Molha de Tomate e Cebola (eggs in tomato sauce with onion)

large Dutch oven and lid, spoon for mixing

4 lbs of ripe tomatoes, peeled, seeded and chopped

5 large sweet onions, cut in half and sliced 

4 cloves of garlic, thinly sliced

6 tablespoons, or enough olive oil to cover the bottom of the Dutch oven pan

1-2 tablespoons of hot pepper sauce of your choice

salt and pepper to taste 

4-6 eggs (depending on how many people you're serving...I serve one to two eggs per person)
